Some of the best food stories start with a simple idea: let people see, touch and harvest what they're about to eat. That's exactly what happened at Novotel Sydney Darling Square, where the hotel's culinary team put on an incredible food event in support of WWF, built entirely around Greenspace's living produce.
Led by Praveen Rodrigo, Novotel Darling Square's Director of Culinary, the team designed a menu that didn't just feature Greenspace herbs, microgreens and edible flowers, it put them, quite literally, on the table. Diners at the event harvested living produce straight from the table setting and added it to their own dishes as they ate, turning dinner into an experience rather than just a meal.
Greenspace has worked alongside Novotel Darling Square and the team at the Pumphouse since early 2025, supplying weekly living produce to the hotel's kitchens. Over that time, the partnership has grown from a straightforward produce subscription into a genuine collaboration on sustainability storytelling, content and now, event experiences.
Praveen summed up what makes these kinds of experiences work:
"Food is not just a meal, it is a story."
It's a philosophy that lines up neatly with why Greenspace exists in the first place. Produce that's grown just around the corner and served with almost no distance between farm and fork tells a very different story to anything trucked in from hundreds of kilometres away.
Hosting the event in support of WWF gave the evening extra purpose: a chance to showcase sustainable, hyper-local food production while raising awareness for one of the world's most recognised conservation organisations. It's a brilliant example of what's possible when great chefs, a great cause, and great produce come together.
